MODERN DAY WHOLE WHEAT HARMS YOUR HEALTH

Ever stop to think about that modified whole wheat you’re eating? The muffin at breakfast, the bread on your sandwich for lunch, and the afternoon snack of pretzels are all contributing to bad health. Einkorn wheat existed about 5000 years ago, but modern agricultural scientists began doing hundreds of hybridizations of wheat over the last 50 years. Today, if you compare the two, as did a gent named Dr. William Davis, you will find 14 new gluten proteins identified in the offspring that were not present in either parent wheat plant. WOW!

Understanding what goes into processed foods like this can help us understand the changes we incur over time. No wonder why we have a high prevalence of wheat and gluten intolerance. In a demonstration, Dr. Davis baked a loaf using only Einkorn wheat (ordered from out of the country) and a loaf using modern day organic whole grain wheat. Then he tested his blood sugar and saw that after ingesting the bread on separate days, his insulin spiked (fasting blood sugar of 84mg/dl to 110 mg/dl and 167mg/dl respectively). His insulin increased dramatically from eating the modern day loaf.

A spike up to 167 mg/dl suggests that you have an impaired first phase insulin response. Your first phase insulin response is how your pancreas deals with rapidly rising blood sugar after eating or drinking. In a non-diabetic, the pancreas should kick into gear immediately, flooding insulin into the body to combat all the glucose, never allowing blood sugar to get too high. If these spikes happen often, one should consult a doctor.

People emphasize wheat over white, yet the former is still too modified. Ingest in moderation folks. It is amazing how people still don’t realize the power of a healthy diet and the negative “power” of processed food over decades. Americans seem surprised like deer in headlights when they hear the US is toppling over from the expense of obesity. It was only a matter of time before ignorance caught up with us.
